Month of Guests 2013: Amy Plum

The Best Chocolate Cake in the Universe


Once upon a time I went to a little seaside town in France called La Baule and ate a piece of chocolate cake and my life has never been the same since. Okay, that's a bit of an exaggeration, but I did go on and on about it until one of my French readers asked her mom (who was from La Baule) for the recipe. It's called Le Fondant Baulois, and this is how you make it:

Ingredients:

6 eggs (you use 6 yolks and 3 whites)
1 cup sugar (Isabelle suggests "sucre roux", but they didn't have it at Hyper-U so I used regular granulated)
a little less than 1 cup powdered almonds
1 cup soft, but not melted, salted butter
2 1/2 Tbs cornstarch
9 oz. dark baking chocolate (I used Nestle Dessert)
2 packets of vanilla-flavored sugar (maybe 2 Tbs)
1/2 tsp baking powder

Preheat the oven to 350°


Butter a 9" cake pan, coat bottom and sides with the vanilla-sugar, and then put it in the fridge.



Mix the 6 egg yolks with the sugar.

Melt the chocolate (I did it in the microwave) and add it to the yolk mixture.


Add the powdered almonds, the baking powder, and the corn flour (the batter will now be very thick and hard to work with!), then the soft butter.



In a separate bowl, beat the three egg whites with a pinch of salt until it forms stiff peaks. Fold it into the batter.

Pour this into the cooled cake pan and bake for 35 minutes. (It should be runny in the middle, but the entire top of the cake should look firm.) And enjoy!


The butter gives it a slightly salty taste, and the vanilla sugar on the outside caramalizes to make this...
